Preheat the oven to 170 C and line a loaf tin.
Mash together your bananas, vanilla and coconut oil. For the best texture for the loaf, try and use an electric mixer to get this super smooth.
Beat your eggs and then slowly combine these with the mixture,. The fold in all the dry ingredients; coconut flour, baking powder, cinnamon, salt & bicarbonate of soda. Lastly fold in the chocolate chunks so they are evenly distributed.
Pour into your lined loaf tin and smooth the mixture flat. Place in the centre of the oven for 30 minutes. Use a skewer to test your load after 30 minutes, if the skewer comes out clean then it’s baked, if not the return to the oven for 5 minutes more.
All that’s left is to cut yourself a chunk and enjoy!
