The combination of dark chocolate and raspberries is a match made in heaven. Add the slow release energy of oats and you have a tasty, morale boosting, high carbohydrate snack for around your exercise. Sweetened naturally with honey and shredded coconut, this is a quick and easy idea for all the family to enjoy. Yes, that’s right you can have these tasty bites ready to eat in just 25 minutes.
Set the oven to 170C, melt the coconut oil then allow it to cool slightly so it doesn’t scramble the eggs.
Combine the coconut oil, eggs, vanilla and honey. Whisk until smooth.
Then add your dry ingredients, such as flour, oats and coconut and combine. Finally fold in the chocolate and raspberries.
Grab two baking trays. You can use a tablespoon or it may be easier to use you hands to roll into around 15 balls. If you want more of a cookie feel, then you can flatten the balls on the tray. Leave some space between each one.
Place in the oven for around 12 minutes or until they start to turn golden brown. Leave to cool on a rack and then enjoy.
