I love brownies, I really do; but when you bake them from scratch and see all the sugar that goes in, it can really put you off. So I was in need of an alternative, something I could quickly get a sweet chocolatey hit from without feeling all the guilt of tucking into a standard brownie. So I bring you Bitesize Beetroot Brownies.
These little bites are only around 80kcal and are naturally sweetened with honey. Probably not one for those who don’t like beetroot. There is still a hint of beets there but on a whole these are a great way to satisfy a sweet tooth without over indulging. O and they are Gluten Free and so simple to make.
Ingredients
Pre heat oven to 170C
Whisk together the eggs and honey to point where the mixture starts to increase in size, this usually takes about 5 minutes so it may be worth using an electric mixer where possible.
Next using a food processor blitz up the beetroot. Try get it as finely chopped as possible and don’t throw away the juice.
Weigh out all your dry ingredients, then slowly add these to the egg mixture followed by the beetroot, mixing all the time.
Spread out into a lined tin of your choice (I used a square 8 inch tin) and place in the oven for 30 minutes.
Leave to cool and then chop into 16 bitesize pieces, then melt the 3 cubes of chocolate and drizzle over the top.
